Stuffed Meat Loaf

Stuffed meat loaf

Ground beef (ground turkey works too)1 egg
1 handful of Quick-cook oat meal or bread crumbs
Salt
Pepper
Seasoning salt
Garlic
Whatever your favorite spices are.
Ketchup
1 small can of spicy V-8
1 pkg Instant mashed potatoes
Cook mashed potatoes to packages instructions, but reduce liquid a little. Preheat oven 350 degrees. Spray loaf pan with nonstick spray.

Mix meat, egg, oat meal and spices together, but don’t over mix which will make meat loaf tough
On a piece of aluminum foil lay out meat mixture. Pat meat into a 12x8 inch rectangle.

Place mashed potatoes in the middle of the meat. Roll the meat around the potatoes, think sushi. Tuck the ends in to cover potatoes.

Place inverted loaf pan over meat loaf and flip over.

Bake uncovered for 30-40 minuets; drain off liquid by pouring out. Pour V-8 over the loaf and top with ketchup. Cook for another 18-25 minutes. Let stand 5-10 minutes before slicing.
